I work in food service. It is very easy to be polite. This is true even on personally hard days, and at the end of a long shift. This is also true even when the customer in question is annoying or complaining. I am literally paid to be polite to annoying people. I don't know why a vocal opinion these days is that it's understandable for service workers to be so drained that they ignore basic human politeness.
Your primary role in a customer-facing position is to be polite and hospitable to customers. If that is not something you are committed to being at all times when on the clock, you probably should work in a different field.
