I have had good BBQ in Texas, Louisiana and North Carolina. In most of the US what gets sold as BBQ is just a dry-ass plate of meat(s) with indistinguishable flavor, woody texture, some gooey sides and a huge price tag. The fact that it is typically served on a sheet of waxed paper laid over a school lunch tray almost feels like an additional spiteful insult to see how much contempt the customers will put up with.
