Sausage is better than bacon in just about every circumstance.

For context I live in deep south US where breakfast consists mostly of eggs, sausage, bacon, and sometimes pancakes/waffles, at least at every breakfast I've ever had.

Just about everybody that I have asked about this has said bacon is better the majority of the time. They would rather have straight bacon than sausage in all circumstances. I find this wild because bacon can only be used in certain things like say a sandwich like a BLT, just straight up, or crumbled up on a bakedpotato or something.

Sausage is far far more useful and more flavorful in my opinion even straight I would rather eat sausage depending on the sausage. I do admit there are some bad sausage, but I eat mostly conecuh sausage which is good with literally everything, on sandwiches, straight up, with beans, rice, gravy, casseroles, BBQ and so much more.

And there are just so many different types with different flavor profiles and textures and spices like anduille, boudin, smoked, or country sausage. Theres also European sausage like bratwurst that is amazing. I adore cheddar bratwurst

The only difference I've seen between types of bacon is the thickness and how much fat is on it. I do enjoy a piece of bacon with a lot of fat sometimes but generally its just bland; i cant stand the texture of bacon with little fat. Bacon fat can be used in a lot of things also. Bacon is generally better on sandwiches though.

TLDR: Sausage > bacon due to overall useability and flavor
