Inspired by the recent post about cold food being better, I have the exact opposite opinion. Hot food is better, and that includes salads
Personally I started with finding out that grilled romaine is delicious. Then I saw a recipe for stir-fried iceberg lettuce. And of course cooking spinach helps avoid the unpleasant gritty feeling. Now I like to buy salad mix from the grocery store, cook it (usually sautéed but grilled or broiled are great options too), add the dressing, and eat it as a delicious side dish or main course
Cabbage or Brussels sprout salads or slaws are improved the most. Instead of being tough and a bit smelly they can turn into wonderful roasted vegetables
I tried to think of a salad that would not be improved by cooking/heating it...tuna salad? potato salad? beet salad? All improved. I should try cooking fruit salads next, I bet it would be like pie filling but fresher
