I see that this topic has been posted over the years, but I didn't see any threads about it in the last year, so I want to make sure people don't forget this absolutely true, objective fact: Cornbread is mediocre at best, often horrible, and pretty much the worst thing to pair with any food, including the usual suspects of ribs, chili, brisket, chicken, beans, etc.
It almost always needs dressing up to choke down--honey, butter, etc. Whereas other breads or rolls are often improved by being dressed, but can be quite delicious on their own as well.
I've had cornbreads from southern restaurants, box mixes, and I've prepared recipes from culinary figures like Tipton-Martin, and Edna Lewis; and of course many recipes available online. Every single one has been mediocre at best, and some were unpalatable/dry.
Bonus aside: for any scalawags aka Southerners who moved North, did your opinion on cornbread change while living outside the South? Has your cornbread game changed at all? Do you find the quality of the cornmeal available in the North to be significantly worse than those in the South?
