A lot of people who respond to criticism of the Mario Movie seem to misunderstand what exactly is being criticized.

The story isn't criticized because it's simple, it's criticized because it isn't satisfying, some references are overblown, and the method in which it adapts/writes a lot of characters is off (Peach, DK, Cranky Kong, etc.)

If Mario is a family friendly franchise, you need to make your structure satisfying for everyone, not just for kids and boomers to point something cool out.

And if this is supposed to be THE Super Mario Bros. Movie, as in, officially, Mario has a fine adaptation from the Brooklyn cartoons, but differently adapting/writing some other characters specifically like a fan made parody is weird. I haven't seen Badass Peach since Dorkly.

When people say "Too many references" They aren't talking about stuff like "Mario eats the mushroom and grows big" well, duh, that's not a reference, that's just how the Mushroom Kingdom works, but you have stuff like the General Koopa yelling "Blue Shell" for no real reason other than to appease to people who play Mario Kart.

The needle drops, going too fast, some voice acting decisions are strange, like it doesn't need to exactly be like the games and the movies' ones are decent, but Bowser taking notes of his voice from Sunshine/Odyssey would sound cool, and Mario could've taken some notes from Lou Albano if Charles would've been "too annoying". Again, we're trying to make this movie THE Super Mario Bros. Movie, as in officially, not taking notes from how weird fan made parodies handle things. And even then, Dorkly Mario has the better voice.

A lot of these things are valid criticisms, but people always strawman anything slightly negative about this movie and it's really annoying to anyone who genuinely wants to see improvements in the future.
